Kevin Brown has the restaurant business in his blood. During his teenage and college years in a coastal tourist area of New England, Kevin worked at top-end restaurants.
After earning his degree in Culinary Arts at Johnson & Wales in Providence, Rhode Island, he was Kitchen Manager at HP Mulligan’s in Albany, where he was in charge of all aspects of kitchen operations, including inventories, food and beverage cost control, hiring of cooks, employee scheduling, and payroll.
From there he went to the Albany Marriott, where he played a key role in the opening of the hotel. Starting with an empty storeroom, he was in charge of all receiving for food and beverages. As part of the Purchasing Team, he was also responsible for Quality Control, where his organizational skills enabled him acquire and organize the highest quality goods required for the hotel to open on time.
Recruited by one of the few certified Master Chefs in America as Executive Sous Chef for Stone Ends, a 5-star restaurant in Glenmont NY, Kevin supervised the entire kitchen and wait staff, writing many recipes and helping to create the menu. The restaurant provided high quality foods to its demanding customer base, and Kevin helped the transition of owners go smoothly.
