THE MYTH ABOUT CAJUN FOOD
In the past many of you may have had
a poor experience trying Cajun food. In some cases those experiences may have altered the reputation
of good Cajun cooking. Some people seem to think that all you need
is a bottle of hot sauce and some cayenne pepper and it magically
becomes Cajun food.
However, we’ve had customers from New Orleans tell us time and again how
pleased they are that the Cajun Catering makes a wonderful statement
about how true Cajun cuisine should be experienced.
We also hear comments that Cajun food is too hot for them, to
which I always reply, well someone screwed it up then! It’s an
unfortunate reputation about Louisiana cooking that it has to be hot
and spicy or it’s not Cajun. This is simply not true. The true art
of Cajun cooking is the unique blend of herbs and spices that serve to
enhance the flavor of vegetables, seafood, meat, poultry and wild
game as well as a cook that knows how to blend the ingredients
together.
